INCREDIBLY MOIST CHICKEN BREASTS
4 to 6 boneless skinless chicken breast halves
1 pkg (1.4-oz) French Onion Soup Mix
1 cup panko bread crumbs
1/3 cup mayonnaise

Preheat oven to 425 degrees.

But the soup mix and bread crumbs in a gallon size zip-top plastic bag. Mix together well.

Brush the chicken breasts with the mayonnaise on all sides. Place chicken in the zip-top bag, one piece at a time, and shake bag to coat well. Arrange the chicken pieces on a rack in a broiler pan. Bake at 425 degrees for 15 to 20 minutes until juices run clear and chicken is tender.

APPLE & TURKEY POTPIE
1/4 cup chopped yellow onion
1 tbsp butter
1 can (10 3/4-oz) condensed cream of chicken soup
1 can (10 3/4-oz) condensed cream of celery soup
3 cups cubed cooked turkey*
1 large Granny Smith apple, peeled & cubed
1/3 cup raisins, optional
1 tsp lemon juice
1/4 tsp ground nutmeg
Pastry for a single-crust pie

Preheat oven to 425 degrees.

In a large saucepan, melt butter over medium heat; add the onion and saute until tender. Add the soups, turkey, apple, raisins – if using, lemon juice, and nutmeg; mix together well. Spoon the mixture into an 11 x 7 x 2-inch baking dish.

On a floured surface, roll out the pastry dough to fit the baking dish. Cut slits or a design in the pastry. Place the pastry over the turkey mixture and flute the edges using the tines of a fork.

Bake the potpie at 425 degrees for about half an hour or until the crust is a golden brown and the filling is bubbly.

*Chicken works as well as turkey.

LEMONY CHICKEN SOUP
3 cans (13 to 14-oz each) condensed chicken broth
2 tbsp minced fresh parsley
1/2 tsp tarragon
1 tsp grated lemon peel
3 large eggs
1/3 cup lemon juice
2 cans (5-oz each) premium chunk white chicken, drained, shredded
1 cup cooked brown rice

In a medium saucepan, simmer the chicken broth with the parsley, tarragon, and lemon peel over medium heat for 15 minutes.

Meanwhile beat the eggs and lemon juice until light and frothy. Slowly beat in 1 cup of the hot broth then pour the mixture into the saucepan with remaining broth. Reduce the heat to low and add the chicken and rice. Stir constantly until the mixture thickens slightly, about 3 to 4 minutes. do not boil the soup.

SPLENDA CHEESECAKE

Ingredients:

1 1/2 lbs ricotta cheese (whole milk ricotta works best)
1 lb cream cheese
6 large eggs
2 tablespoons vanilla
2 teaspoons orange extract
6 tablespoons flour
1 pint sour cream
1 cup Splenda sugar substitute (or 1 cup Sugar)
1 (1 lb) package sugar-free caramels (or 1 pound package Kraft caramels)
2 tablespoons canola oil
1 (1 lb) package pecan halves
plain breadcrumbs (for dusting pan)

METHOD:

Preheat oven to 325ºF.

Cream together the ricotta and cream cheese (if using regular sugar beat it into the ricotta and cream cheese mixture until well blended).

If using Splenda hold and add later with the sour cream.

Add the eggs one at a time, beating each in well. Add the vanilla and orange extract. Spoon in the flour, sour cream and Splenda (if using), mix well. Mixture will be loose; don't worry.

Grease a 10 inch spring form pan with butter or margarine and dust with bread crumbs (merely helps cake not to stick) Pour cheese cake batter into prepared pan and bake at 325ºF for about 1 hour (cake has a tendency to crack. Don't worry, the topping will cover any crack).

(Tip: if you didn't beat properly and discover you have lumps of cream cheese at the bottom as you are pouring into the pan, since there is no crust you can use an electic hand mixer and beat the cream cheese right in the pan).

Cool cake completely. in the top of a double boiler melt the caramels with 2 Tablespoons of oil stirring until nice and smooth. Spread the melted caramels over the top of the cooled cheesecake. Arrange the pecan halves in a nice pattern pressing them gently into the still warm caramel. Refrigerate the cheescake preferably overnight.

The planet recently celebrated a birthday, although celebrate is a term used loosely. In fact, it is not really the right word at all, though there seems to be a lack of a better word. how do you celebrate the birth of a monster that, although greatly injured, still infected and threatened to kill 2.6 million people worldwide in 2009? the monster is HIV/ AIDS, and it just turned 30. while it is surely much older than that, the awareness and world retaliation really began 30 years ago. as a global community the world has fought valiantly with many successes, but failures as well. Game changers have come into play, and for much of the world diagnosis is now that of a chronic illness rather than a death sentence.

While this is a great thing, the monster still has not been stopped. Great strides have been made however. Recently, on may 12, 2011, the early closure of a clinical trial was announced by the US National Institutes of Health. this trial was testing the ability of antiretroviral drug therapy to reduce the likelihood of transmitting the disease. the trial was closed early due to the early indication of very positive results. this is a game changer in the response to and the fight against HIV and AIDS. the thirty year old emergency response is over now. Now is the time to set long term goals and make a plan to meet them.

The global response over the last 30 years has been tremendous and there has been great progress made. there have been significant reductions in death rates and new infections, and major increases in awareness and treatment, but the goals of the last decade were greatly missed. with plans to increase the comprehension and knowledge of HIV in young people to 95%, provide universal access to drug therapy, and reduce the vertical transmission rate by 50%, among other goals for 2010, gains were made but in 2009 studies showed the goals were going to be undershot. Young people’s comprehension and knowledge of the disease has increased, but 34% was the number achieved, not 95%. with numbers like this all over the board, it is apparent that it is time to step it up.

So at 30, AIDS is crippled, but not finished. the global community must continue to fight and not allow it to rise back up before knocking it further back. A long-term response and plan for eradication is in the works to rid the world of the monster forever.
